This is yummy, spicy mint egg fried rice. In this dish, cooked rice tossed with sautéed veggies, peanut, green peas and eggs. I have used chilli garlic chutney for spicy. You can use schezwan sauces too. Adding mint leaves give great aroma and flavor to this dish.
We love fried rice, wanted to give slight variation to this dish. Added groundnut gives nice crunchiness and taste to this dish. Enjoy and serve hot!!!Ingredients
Cooked Rice - 2 Cups
Eggs - 4
Mint Leaves - a handful
Minced Garlic - 2 tsp
Finely Chopped Onion - 1/4 Cup
Peanut - 1/4 Cup
Frozen Green Peas / Cooked Green Peas - 1/4 Cup
Salt to taste
Soya Sauce - 2 tsp
Chilli Garlic Chutney/Schezwan Sauce - 2 tsp
Fresh Ground Pepper to taste
Sesame Oil - 4 to 5 tsp
Sesame Seeds - 1 tsp
Dry Red Chilli - 4
Method
Heat oil in a. Add sesame seeds, dry red chilli and peanut then fry for free minutes.
Then add chopped onions and minced garlic then sauté it for few seconds.
Add mint leaves and fry for few minutes. Then add green peas along with salt and sauté it for few seconds.
By mean time, crack the eggs in a separate bowl. Beat them with little salt and pepper whisk it until coated well.
Then transfer this into sautéed veggies. Let’s cook for 2 to 3 minutes. Add chili garlic chutney, soya sauce and mix well.
Add the cooked rice and tossed with veggies and peanut.
Once it done, garnish with mint leaves and serve hot!!!
