Creamy Poha Kheer | Aval Payasam | Flattened Rice Kheer |

 It’s a creamy rich Poha Kheer. This is one of the traditional sweet of southern parts of India. I have added homemade fresh creamy paste which is the combination of cashew nuts and coconut. This gives excellent taste to the dish. It tastes great and I am sure you will definitely love it.  Enjoy your cooking!



Ingredients 

Poha | Flattened Rice | Aval - 1/2 Cup 

Ghee - 2 tbsp 

Cashew Nuts - 2 tbsp 

Dry Grapes - 2 tbsp 

Salt - a pinch 

Milk - 2 Cups 

Brown Sugar - 1/2 Cup 

For Cashew Coconut Paste 

Grated Coconut - 3 Tbsp 

Rice Flour - 3 Tbsp 

Cardamom - 5

Broken Cashew - 20

Milk - 1 Cup 

Method 

In a mixie jar, add the ingredients which are under for Cashew Coconut paste, and grind it as paste. Then keep it aside.

Heat a pan, melt ghee. Add cashew nuts, dry grapes and fry until gets slight golden brown in color. Then take it out and keep aside in a separate bowl.

In the same pan, add Poha/Aval. And roast until gets slight brown in color.

Add milk and stir well then cook for 10 minutes or until it becomes soft or cooked well.

Add a pinch of salt & brown sugar and then mix well. Let it cook for another 2 minutes.

Add the ground cashew coconut paste and stir well.

Now add the roasted cashew nuts and dry grapes and mix well. Then switch off the flame and serve hot or cold.

Cheesy Fried Noodles

 

This is a street style snack recipe. It’s loaded with cheese and veggies. Maggi recipes have become quite popular especially with teenagers and kids these days. It is an instant and tasty snack with a lot of flavors. It has lead to a number of alterations and experiments to the basic Maggi recipe. One such simple yet the yummiest snack alteration is easy cheese Maggi recipe loaded with melting cheese.

Ingredients 

Maggi Noodles - 4 Packs 

Thinly Sliced Onion - 1 Cup 

Thinly Sliced Capsicum - 1/4 Cup 

Thinly Shredded Carrot - 1 Cup

Thinly Shredded Cabbage - 1 Cup 

Finely Chopped Coriander Leaves - 1/2 Cup 

Taste Maker | Maggi Masala - 8 tsp 

Grated Cheese - 1 Cup 

Olive oil - 2 tbsp 

Salt - to taste 

Ground Pepper - to taste 

Chopped Green Chilli - 2

Method 

Bring 1 liter water to boil in a saucepan. Add 4 packs of noodles (maggi /ramen/any brands).

$Let it boil for 3 minutes and switch off the flame.

Transfer this into strainer. Let’s strain well and keep aside.

Heat oil in a pan. Add sliced onions and sauté it for few minutes.

Then add carrot, capsicum, cabbage, coriander leaves  and sauté it for 2 to 3 minutes.

Add taste maker and salt  then sauté it for few seconds.

Now add the cooked noodles and toss it well.

Then add ground pepper & grated cheese and mix well and fry for 2 more minutes.

Then switch off the flame and garnish with chopped coriander leaves and serve hot.

Urad Dhal Chutney

 Urad Dhal Chutney is simple and tasty chutney which goes very well with idli/dosa/Pongal/upma/chapatti. In this dish, red chilli, urad dhal, ginger pieces and other ingredients sautéed and finally tempering ingredients added to chutney. Try this yummy recipe and serve hot.



Ingredients 

Urad Dhal - 3 Tbsp 

Chopped Onion - 2 ( big)

Chopped Tomato - 1 (big)

Dry Red Chilli- 5

Chopped Ginger - few

Chopped Coriander Leaves - few 

Tamarind - little 

Salt to taste 

Oil - little 

To  Temper 

Oil - 1 tsp 

Mustard Seeds - 1/2 tsp 

Urad Dhal - 1 tsp 

Dry Red Chilli-5

Chopped Coriander Leaves - few

Finely Chopped Onion -1 tsp 

Method 

Heat oil in a pan. Add red chilli, urad dhal I and chopped ginger then fry for few minutes.

Transfer this roasted ingredients into mixie jar.

In the same pan, add chopped onions and fry fry for 2 to 3 minutes.

Add chopped tomatoes and fry well. powder 

Finally add little salt and tamarind then switch ochopped ff the flame.

Let it cool down completely and grind it as coarse paste. Then keep it aside.

Heat oil in a pan, add mustard seeds, urad dhal, dry red chilli.

Add chopped onions and coriander leaves and fry for few seconds.

Then transfer this sautéed ingredients into chutney.

Yummy and tasty chutney is ready to serve with idli, dosa or chapatti.
