Podi Sambar / பொடி சாம்பார்

 It’s simple and tasty dish. This is one of my mom’s recipe. This is the only ingredients needed to make this masala powder.  This goes very well with steamed rice with any fry. Try this interesting recipe and share your feedback.


Ingredients 

Cooked Toor Dhal - 3/4 Cup 

Peeled Shallots/ Small Onions - 10 (or)

Chopped Onions - 1/4 Cup 

Drumstick Pieces - 8 

Sliced Eggplant - 1/2 Cup 

Chopped Mango - 6 Pieces 

Salt to taste 

Turmeric Powder - 1 

Tamarind Water - 1/5 Cup 

Water as required 

For Roast ( Podi)

Coriander Seeds - 1 and 1/2 tsp 

Channa Dhal - 1 tsp 

Dry Red Chilli - 6

Cumin Seeds - 1 tsp 

Peppercorn - 1 tsp 

Hing - 1/4 tsp 

Oil - 1 tsp 

To Temper 

Oil - 1 tsp 

Mustard Seeds - 1/2 tsp 

Dry Red Chilli - 2

To Garnish 

Finely Chopped Coriander Leaves 

Method 

Heat 1 tsp of oil in a pan, add the ingredients which are under for roast and sauté it for few minutes. Then transfer this into blender. Let it cool down completely and grind it as powder.

In a vessel bring water to boil, add drumstick and eggplant pieces along with salt. Once it done, add tamarind water.

Now add turmeric powder, ground masala (for podi) and mix well. Then add the cooked toor dhal and mix well. Add chopped mango pieces and cook it well.

Heat oil in a pan, add the tempering ingredients and sauté it for few seconds. Then add chopped onions and fry for few minutes and transfer this into Sambar.

Then Podi Sambar is ready to serve with steamed white rice.
