Black Beans Dosa

Black Beans Dosa is yummy and healthy dish. This goes very well with chutney and sambar. In this dish, soaked black beans added with other ingredients and grind it as fine paste. Then tempering ingredients added and mixed well. 


Black beans decreases the risk of obesity and diabetes. It helps to prevent constipation and promote regularity for a healthy digestive tract. This may help strengthen bones. This may help strengthen bones and lower blood pressure.


Ingredients

For Batter

Black Bean - 1 and 1/2 Cups

Idli Rice- 1/2 Cup

Urad Dhal - 1/4 Cup

Dried Red Chilli- 3

Cumin Seeds - 1 tsp

Fenugreek Seeds - 1 tsp

Garlic Pods - 4

Peppercorn - 1/2 tsp

Curry Leaves - few

Salt to taste

Water as required ( for soaking rice and other ingredients)

To Temper

Oil - 1 tsp

Mustard Seeds - 1/2 tsp

Cumin Seeds - 1 tsp

Finely Chopped Onion - a handful

Finely Chopped Curry Leaves - few

Finely Chopped Ginger - 2 tsp

Finely Chopped Garlic - 2 tsp

Method

Take a big vessel and add all the ingredients for batter and soak it overnight or 6 to 7 hours.

Then grind them together until a smooth batter is formed.

You can use the batter immediately or store it overnight.

Heat oil in a pan, add the tempering ingredients and sauté it for few seconds and transfer this into batter.

Place a tawa or dosa pan on the stove, allow it to heat and place batter on the pan and rotate in circular motion until you get a thin dosa.

Now perfect shiny, crispy black bean dosa is ready to serve with chutney or sambar.

Chickpea Dosa/ Kondaikadalai Dosa

This is simple and healthy dosa which is prepared using minimal ingredients. It is a high protein dish and weight loss recipe for adults.
Ingredients 

Chickpea - 1 Cup 
Urad Dal - 1/2 Cup
Fenugreek Seeds - 1 tsp
Salt to taste 
Freshly Crushed Peppercorn- 1 tsp
Sesame Oil - 1 to 2 tsp
Ghee - 2 tsp

Method 

Soak chickpea, Urad Dhal and fenugreek Seeds at least 6 hours. Once it done grind it as fine paste. 
Then add required salt and mix well, let it be for 4 to 5 hours.

In a dosa pan, apply oil. And pour dosa batter and make it as thin dosa. Add the fresh ground pepper, ghee and close the lid and turn it into other side. 

Repeat the same process for making all dosas and serve with any curries, Sambar or Chutney.

Crispy Onion Rava Dosa

Rava dosa is a very popular South Indian Breakfast which is very easy to prepare. It is very tasty, crispy and instant but you need a little skill to prepare this dosa. It will take longer time to get cooked. You can prepare this without onions also.


Ingredients 
Sooji/Rava - 1/2 cup
Rice Flour - 1/2 Cup
All purpose flour/Maida - 1/4 cup
Yogurt/Curd - 1 tbsp
Chopped Green Chilli - 1
Finely Chopped Ginger - 2 tsp
Pepper - 1/2 tsp
Cumin Seeds - 1 tsp
Finely chopped curry leaves - few
Finely chopped coriander leaves - few
Finely chopped Onion- 1 ( big)
Salt to taste
Oil for roast
Method 

In a large mixing bowl take rava, rice flour and maida, also add curd, salt and 2½ cup water.

Whisk and mix well making sure there are no lumps. Then add  chilli, 1 inch ginger, pepper, cumin, few curry leaves, coriander leaves and chopped onion.

Add 1½ cup water and prepare a watery consistency batter. Rest the batter for 20 minutes making sure the rava has absorbed water, mix well making sure the batter is thin watery consistency

Then pour the dosa batter over very hot tawa, lower the flame and cook until the dosa turns golden and crisp, and fold the dosa and serve crispy yummy  rava dosa with coconut chutney.

Veg Spring Roll Dosa

This is yummy, tasty dosa recipe. This is slightly different from regular dosa. In this dish, sliced vegetables sauteed and tossed with chilli tomato sauce. The sweet and spicy dosa with crunched veggies gives fine taste to the dish. 


My kids wanted something special to eat. So, I just made this dish. They really loved it. So, you can also try this dish and enjoy cooking!

Ingredients

Dosa Batter – 4 Cups

Thinly Sliced Onion – 1 (big)

Thinly Sliced Cabbage – 1 Cup

Thinly Sliced Pepper/Capsicum – ½ Cup

Soy Sauce – 1 tsp

Chilli Tomato Sauce – 2 tsp

Chilli Powder – ½ tsp

Grated Cheese – ¼ Cup

Salt to taste

Chopped Mint Leaves – few

Chopped Coriander Leaves -few

Sesame Oil – 3 tsp

Method

Heat oil in a pan, add sliced onions with salt and saute it for few seconds.

Add mint leaves, coriander leaves, capsicum, cabbage slices and fry for few minutes. Add chilli powder, soy sauce, chilli tomato sauce and mix well.

Heat oil in a pan, pour a ladleful of the dosa batter on it and spread it in a circular motion thin circle.

Add grated cheese on top of dosa and spread veg mix. Cook till the bottom of dosa turns golden brown. Then roll the dosa along with veggies.

Foxtail Millet Dosa/ தினை தோசை


Foxtail Millet Dosa

Foxtail Millet Dosa is a healthy and nutritious dosa. It is nothing but Thinai(தினை) in Tamilnadu. This is one of the oldest of all the cultivated millets. Foxtail millets gets digested at slow rate thus keep one away from in taking extra calories. This gives a feeling of fullness which helps to control excessive food consumption. It has anti-aging properties, by adding foxtail millet in your diet, you can have a smooth, youthful skin. It has rich in calcium which is very important for strengthening bones. This help to improve brain development.
Ingredients

Foxtail Millets – 3 Cups

Urad Dhal – 1 Cup

Fenugreek Seeds – 1 tbsp

Method

Wash and soak foxtail millet in a bowl for 6 hours. In another bowl soak urad dhal and fenugreek seeds.

Grind both separately to a smooth batter. Then mix urad dhal batter with foxtail millet, then mix with salt.

Leave it to ferment for another 6 hours. Now foxtail millet batter is ready to make dosa.

To Make Dosa

Heat a tawa, pour a ladle of dosa batter and spread it in a circular motion.

Drizzle some oil on top of dosa. When it is done with one side, flip it over to the other side and keep cook.

Once the dosa gets cooked, remove it from tawa and serve hot with chutney and sambar.

Pesarattu / Moong Dal Dosa

Pesarattu is a healthy breakfast/ dinner made using whole gram. It goes very well with any chutneys, sambar. I made aviyal as a side dish. That was a great accomplishment with pesarattu. My son liked very much. Enjoy this yummy dish!
Ingredients
Whole Green Gram – 1 Cup
Split Green Gram Dal – ½ Cup
Raw Rice – 2 tsp
Oil – 2 tsp
To Grind
Chopped Onion – 1 (big)
Green Chillies – 4
Ginger – 1-inch Piece
Salt to taste
To Temper
Finely Chopped Onion – 1 (Big)
Finely Chopped Green Chillies – 1
Cumin Seeds – 1 tsp
Method
Soak gram and rice in water throughout night or at least 5 hours. Strain water and grind until frothy. Add onions, green chillies, ginger and grind to a smooth paste, adding water if needed. Finally add salt.

Heat oil in a pan, add the tempering ingredients one by one and saute it for few seconds.
Heat a tawa/dosa pan and spread a ladleful on oi from Centre to make a dosa. Sprinkle fried onions on the top. Press gently with a flat ladle.

When dosa gets little gold in color, sprinkle oil, allow to roast well and do not flip it to other side. Serve with chutney/sambar/aviyal.
