Egg Lappa / முட்டை லாப்பா


Mutta Lappa/Egg Lappa is a very popular dish from all over Tamil Nadu restaurant & road side shops. I have tasted many times in my native place. We all love this food very well. 

Due to corona issues, kids are at house. They wanted to eat egg lappa. So I made it today. It’s really a soft and fluffy dish. I have used the real ingredients, if you’re very healthy conscious person, then you should replace with wheat flour. 
Here is the recipe and enjoy well.

Ingredients:
For Parotta( roti)
All-Purpose flour (Maida) – 4 Cups
Eggs – 2

Salt to taste
Oil as required
Water as required
Milk as required
Oil – For shallow frying

For Egg Mix
Finely Chopped Onion - 1
Finely Chopped Capsicum - 1/2 Cup
Finely Chopped Tomato - 1
Finely Chopped Coriander Leaves- few
Finely chopped Chilli - 1
Salt to taste

Method:
Preparation of Dough
In a bowl, add All-Purpose flour (Maida), salt, egg, milk, oil and crumble the flour to mix all ingredients.
Now add water to make a soft dough. Cover and rest the dough for at least 1 hour.

Prepare Egg Stuffing:
In a bowl, add eggs, onion, green chilies, salt, capsicum and Coriander leaves. Beat the egg batter until it gets fluffy.

Prepare Paratha (Lappa)
Take a loaf from the dough and roll a big roti. Now place egg stuffing in the middle of the roti. Now fold the sides properly and need to cook both sides then lappa will be ready.

Frying
In a frying pan, add oil to shallow fry For egg paratha. Keep the temperature low to medium so the paratha cooks well from inside.
As you get the golden brown color from both sides.
Take it out!

Egg Lappa is ready to serve. You can serve with any sauce.
