Besan Karela/ Gram Flour Bitter Gourd Fry

Bitter gourd fry is a very tasty recipe and goes very well with either plain rice or sambar rice. This is prepared using sliced bitter gourd, salt, gram flour and spice powders. This is a no-jaggery bitter gourd recipe. This is a very tasty recipe using bitter gourd.

Bitter gourd is a wonderful vegetable having many health benefits. Bittergourd is very good for diabetic patients. It helps to maintain the sugar level. 


However most of the Bittergourd recipes use Jaggery, taking out the goodness of Bittergourd for the diabetic patients. But this is a no-jaggery recipe. 

Ingredients 

Bitter Gourd - 2 tenders 

Chilli Powder - 1 tsp 

Coriander Powder - 1 tsp 

Cumin Powder - 1/2 tsp 

Turmeric Powder - 1/2 tsp 

Amchur Powder - 1 tsp 

Garam Masala - 1/2 tsp 

Crushed Fennel Powder - 1 tsp 

Besan / Gram Flour - 1 tbsp 

Hing/ Asafoetida - a tsp 

Salt to taste 

Oil 4 to 5 tsp 

Method 

To begin with rinse and slice the bitter gourd thinly. After slicing deseed them. You  can soak them in salt water to remove the excess bitterness.

Take a thick bottomed frying pan and heat 2 tbsp of oil. Add in bitter gourd slices.

Start fying them under low flame until the slices are cooked and turns brown here and there. Add in oil if required.

After frying add in salt, asafoetida, turmeric powder and red chilli powder.

Then add in coriander powder, cumin powder, amchur powder and garam masala.

Give a quick mix. Add in oil if required. After frying for a minute add in crushed fennel seeds.

Give a quick mix. At the end add in a tbsp of gram flour (besan or kadle hittu)

Continue frying for 2 more minutes. Add in oil if you find it very dry. Switch off the stove and serve it with plain rice , sambar rice or curd rice.
