Fada Lapsi/ Gujarati Lapsi


This is a traditional and a classic dessert recipe made from wheat grain and jaggery. It’s a popular gujurati cuisine, but also extremely popular in rajasthana and maharashtra. It also makes it a one-pot meal, but if you do not have a pressure cooker, you can use a deep pan to cook it. 
                                        
You can replace jaggery with sugar tastes great when cooked with fresh homemade ghee. You can replace jaggery with sugar if you are not comfortable. This recipe tastes great when cooked with fresh homemade ghee.
Ingredients

Broken Wheat/ Daliya - 1/2 Cup
Clarified Butter/ Ghee - 4 tbsp
Cinnamon Sticks - 1 inch
Cardamom Pods - 3
Cloves - 3
Hot Water- 2 Cups
Jaggery - 1/4 to 1/2 Cup 
Cardamom Powder - 1/2 tbsp
Water - 1/2 Cup
Dry fruits and Nuts - 4 tsp
Saffron Threads - few

Method

In a pressure cooker heat 3 tbsp ghee and saute cinnamon,  cardamom and cloves until it turns aromatic. Then add broken wheat and roast on low flame. Roast for 5 minutes or until the daliya turns aromatic.
Add 2 cups of hot water and mix well. Cover and pressure cook for 5 whistles or until daliya are cooked completely.
Open the cooker and add jaggery and water. Mix well making sure the jaggery melts completely.
Cook for 5 minutes or more until the jaggery thickens slightly.
In a small kadai heat 1 tbsp ghee and add cashew, almonds and raisins. Roast until the nuts turn golden brown. Add in roasted nuts and cardamom powder. mix well.
Enjoy fada lapsi garnished with roasted nuts and kesar.
