Fried Potato/Aloo Fry/Potato Fry



It is simply prepared with diced potatoes which is fried with little oil and then spiced with Chilli powder and salt as required. This is an another simple and tasty aloo fry which goes very well with sambar rice, curd rice and rasam sadam.


Ingredients

Potatoes/ Aloo - 2 ( large)
Oil - 5 tbsp
Kashmiri Chilli Powder - 1/2 to 3/4 
Salt to taste


Method
Peel the potatoes and cut into small cubes.

Soak the chopped potato pieces in cold water for 5 minutes to get rid of extra starch.

Heat a non stick pan or a thick bottomed pan with 4-5 tbsp of oil, once the oil turns hot, add in the chopped - soaked potato cubes in it.


Stir and spread the potatoes gently making sure to coat it with oil. Fry for 2-3 minutes on medium flame without disturbing. Fry the potatoes till it turns golden brown in colour from all the sides.

Switch off the flame and sprinkle chilli powder and also sprinkle salt to taste and mix immediately making sure to coat evenly. 

Finally serve aloo fry or potato fry with hot steamed rice or rasam.
