Saravana Bhavana Style Veggie Kurma

This is an easy and simple creamy curry. It is widely used to make both spicy and creamy sauce based curry. This Kurma tastes great when served watery. Increase the amount of chilli if required for spicy kurma. 


Adding vegetables is absolutely your choices. This goes very well with chapatti, poori and idiyappam.
Ingredients

For Kurma
Sliced Onion - 1 ( big)
Bay Leaf - 1
Cumin Seeds - 1 tsp
Ginger Garlic Paste - 1 tsp
Chopped Vegetables/ Frozen Vegetables  - 1 Cup
Salt to taste
Lemon Juice - 2 tsp
Chopped Coriander Leaves - few
Oil - 2 tsp
Water as required

For Masala 
Grated Coconut - 1/2 Cup
Cashew Nuts - 10
Green Chilli - 2
Roasted Gram - 1 tsp
Cinnamon - 1/2 inch
Cardamom - 3
Fennel Seeds - 1 tsp
Poppyseeds - 1/ 2 tsp
Water as required

Method 

In a blender, add the ingredients which are under for Masala and grind it as fine paste and keep it aside. 

In a large pan, heat  oil and saute cumin, bay leaf. And also add sliced onion and ginger garlic paste until it softens.

Add vegetables along with required salt and sauté it for 2 minuets. Now add ¼ cup water, cover and cook for 5 minutes.

Once the vegetables are almost cooked add in the prepared white masala paste. Sauté for 2 minutes until the raw flavours disappear.

Add in 1 cup water and mix adjusting consistency as required. Cover and boil for 5 minutes making sure the flavors are well absorbed.

Then add coriander leaves, lemon juice and mix well. Enjoy vegetables kurma with chapati and poori.
