Udacha Egg Curry

It’s simple and delicious egg curry. My mom used to make this curry in this way. The taste will be amazing. I love this curry when we have with steamed white rice, chapatti or dosa.
Ingredients
Eggs - 6
Finely Chopped Onion - 2 ( big)
Finely Chopped Tomato - 2 ( big)
Ginger Garlic Paste - 1 tsp
Chopped Green Chilli - 2
Chilli Powder - 2 tsp
Coriander Powder - 3 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Salt to taste
Water as required
Chopped Drumsticks - a handful 
Chopped Potato - 1

To Temper

Oil - 1 tsp
Mustard Seeds - 1/4 tsp
Cinnamon Sticks - 1 inch
Cloves - 3
Cardamom - 3
Fennel Seeds - 1 tsp
Chopped Coriander Leaves - few

Method

Heat oil in a pan and temper with mustard seeds, Cinnamon, cardamom, clove, fennel seeds. Then add in finely chopped onion , ginger garlic paste, green chilies, curry leaves and saute until golden brown.

 Now lets add the masalas - Turmeric powder, Coriander powder, Garam masala, Chili powder and mix well. If required add a little bit of water to prevent the masalas from burning. Next add in finely chopped tomatoes and cook until everything turns into a paste.

 Once the tomatoes are nice and soft, then add drumsticks,  potatoes and water, required salt and let it cook for few more minutes. Beat one egg and add it to the boiling gravy and stir, adding egg thickens the gravy. Now break open 4 eggs and drop it directly into the curry. Cover and let it cook for 5 minutes.

 Now if required flip the eggs to the other side and cook for few more minutes - 2 to 5 minutes. Finally garnish with coriander leaves and turn off the heat.
