This is a simple and quick boiled egg fry recipe where boiled eggs are tossed with Indian spices. It can be served as a side dish for any rice or can be served with rotis. Let’s see how to prepare this yummy dish.
Ingredients
Boiled Eggs-5
Chopped Onions - 2
Sliced Tomato-1
Salt to taste
Turmeric Powder - 1/2 tsp
Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Garam Masala-1/4 tsp
Sliced green Chilli - 1
Ginger Garlic Paste - 1 tsp
To Temper
Oil - 2 tsp
Mustard Seeds- 1/2 tsp
Cumin Seeds- 1/2 tsp
Urad Dhal - 1 tsp
Cherry leaves- few
To Garnish
Chopped Coriander Leaves-few
Method
Heat oil in a pan. Add the tempering ingredients one by one and sauté it for few seconds. Garam Masala-1/4 tsp
Sliced green Chilli - 1
Ginger Garlic Paste - 1 tsp
To Temper
Oil - 2 tsp
Mustard Seeds- 1/2 tsp
Cumin Seeds- 1/2 tsp
Urad Dhal - 1 tsp
Cherry leaves- few
To Garnish
Chopped Coriander Leaves-few
Method
Add chopped onions, green chilies, salt together until they become soft. add curry leaves, ginger garlic paste and saute for a minute.
Add turmeric powder, red chili powder, coriander powder and mix well.
Remove the shells from boiled eggs, using knife make a slits into the eggs and place them in the pan and mix carefully.
Then add garam masala and mix again. cover and cook for 3-5 minutes on low flame.
Remove the lid, add chopped coriander leaves and turn off the heat.
