Healthy Spinach

Spinach is one of the most amazing green vegetable. It contains vitamins and minerals. It is a great veggie help to improve your eyesight and strength to bones. This should be helpful to prevent you from having cancer.
This is a simple and healthy recipe. This should be goes well with chapatti, bread, and any meals.
Ingredients
Chopped Spinach – 2 bunches
Chopped Onion – 1 cup
Chopped Mixed Vegetables – 1 ½ cups (corn, carrot, peas)
Grated Coconut – 4 tsp
Sliced Green Chilli - 2
Chopped Ginger & Garlic – 1 tsp
Fennel Powder – ½ tsp
Salt to taste
(To Temper)
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Dry Red Chilli – 2
Curry Leaves – few
Oil – ½ tsp
Method
In a pan, heat oil. Add the tempering ingredients one by one and saute it for few sec.
Then add the chopped onions, green chilli and fry for few minutes. Now add chopped garlic and ginger.
Add the chopped spinach with little salt, fennel powder and mixed vegetables closed the lid and cook it for 3 to 5 min on medium flame.
Finally add the grated coconut and mix well. Serve hot this with chapatti/bread.
