Veg Poha/Aval Upma


Veg Poha Upma is an easy, quick and tasty breakfast recipe. We have added many veggies and this is good for health.

It is made from flattened rice. This can be easily digestible.

Ingredients

Poha/Aval – 1 cup

Chopped Carrots – ¼ cup

Soaked Peas – ¼ cup

Finely Chopped Onions – 1 (big)

Roasted Peanuts – 3 tsp

Corn – ¼ cup (Boiled)

Red Chilli Powder – ½ tsp

Chopped Capsicum – ½

Salt to taste

Sliced Green Chilli – 4

Minced Ginger – ½ tsp

Chopped Coriander Leaves - few

(To Temper)

Mustard Seeds – ½ tsp

Hing – a pinch

Urad Dal – 1 tsp

Channa Dal – 1 tsp

Curry Leaves – few

Method
In a pressure cooker add carrot and peas for 3-4 whistles come out with enough water.

Soak poha in water till immersing level or at least 20 min.

Heat a kadai with oil, add the items listed under 'to temper' let it splutter.

Add ginger and chopped onions and saute till slightly browned. Then add green chilli and capsicum fry for few min.

Now add cooked veggies along with spice powders and required salt. Let the veggies blend with the masala powders.

Then add soaked poha. Give a nice mix and saute it for few min.

Finally add the roasted peanuts and mix well. 
Garnish with chopped coriander leaves. Enjoy :)!!!
