Besan Burfi

Besan Burfi is a simple and great sweet dish. It is made with roasted besan, butter, sugar and nuts. Adding cardamom gives nice aroma and almonds give nice taste and richness.

 We can easily prepare these dishes at home itself. It can be best dessert and you can easily make and the right option for potluck.
Ingredients

Besan Flour – 2 cups

Sooji/Semolina/Rava – 4 tsp

Almond Powder – ¼ cup

Ghee – 6 tsp

Sugar – 2 cups

Water – 1 cup

Crushed Pistacho – 3 tsp

Crushed Cardamom – 4

Butter – 2 tsp

Method

In a bowl, add besan and semolina with 3 tsp of ghee and mix it well. Rub gently with fingers. It should be grainy. Let it be for more than an hour.

In a pan, melt butter. Add besan and roast it for about 5 minutes stirring continuously.

Add almond powder and roast it till gets slight golden in color.

Once it cool down, then grind it as a fine powder. And keep it aside.

In another pan, bring water to boil with sugar together over medium flame until the syrup gets ready with good consistency.

Add the besan powder into this sugar syrup and make sure without forms any lumps.

Keep stirring continuously and switch off the flame.

Grease butter in a plate and transfer this besan mix into it. Sprinkle the fried and crushed pistachios on top of that.

Let it be for another 1 hour and cut into squares. Enjoy…
