Sweet / Sakkara Pongal

Sweet pongal / Sakkarai pongal are very famous dish especially at pongal festivals. We used to prepare this dish almost our week ends. Pressure cooking time of rice depends on the variety of rice so adjust accordingly. You can use sugar instead of jaggery.



Ingredients

Raw rice – 1 cup
Moong Dal – 1/2 cup
Grated Jaggery – 2 cups
Salt – a pinch
Ghee – 5 tsp
Dry Nuts – 5 tsp
Dry Grapes – 5 tsp
Cardamom Powder – 1 tsp
Coconut Milk – 2 cups
Water – 2 and 1/2 cups

Method

In pressure cooker bring water and coconut milk to boil. Then add raw rice, washed moong dal and 2 tsp of ghee to it. Pressure cook for 5 whistles. Mash it once done.

Heat a vessel, add grated jaggery. Let the jaggery melt over slow flame till it’s sticky on touch. Don’t over cook it. Then add this to the mashed rice in cooker.

In a separate pan, heat remaining ghee and roast cashews to golden and add raisins to it.

Once it fluffs up, transfer it and keep aside. Then add cardamom powder and stir it.

Mix well and cook in a medium flame for 5 minutes. Add ¼ of milk or water, if it is necessary.

Add ghee little by little while cooking. Finally add nuts and raisins.

Ready to serve!!!
