Gajar Ka Halwa / Carrot Halwa

It’s a traditional Punjabi dessert made with carrots and milk. I didn't add any food color. It’s a very simple and easy dessert only thing you need to have shredded carrots.

I have added condensed milk for great taste, you can add khoa also. As per your taste you can reduce the amount of ghee. I just fried carrots using ghee because of my son.

Carrot has rich in vitamin A, this helps to maintain a healthy vision and glowing skin.



Ingredients

Grated Carrot – 2 cups
Milk – 1 cup
Condensed milk – 1/2 cup
Sugar – 1 cup
Cashew Nuts – 4 tsp
Dry Grapes – 3 tsp
Cardamom Powder – 1 tsp
Salt to taste (little)
Ghee – ¼ cup

Method

In a pressure cooker, add 2 tsp ghee, grated carrots, and milk. Cook until 3 whistles come out. Then switch off the flame. Let it cool down.

In a pan, melt ghee and roast dry grapes and cashew nuts till light brown and keep them aside in a bowl.

In the same pan, add remaining ghee, cardamom powder, pressure cooked carrots and fry well on a low flame.

Now add a pinch of salt to taste, then add sugar and mix it well. Now add condensed milk and mix it well.

Add the rest of ghee or more if you prefer and the fried cashews and raisins.

You can serve this delicious carrot halwa!!! If you want you can refrigerate too.
