Lauki Kheer

Lauki Kheer is prepared from grated bottle gourd instead of the usual rice. Normally the kheer recipes are very fattening because they are high calories.

But it’s a healthy dessert; it cuts out the carbohydrate content. Lauke is not fattening like rice and has lots of vital nutrients. For diabetic person can use jakkery rather than sugar and also reduce the volume of sugar.

We really enjoyed having this yummy and delicious dessert. Honestly speaking my family members couldn't find out the main ingredients what I used. They love this kheer.
Ingredients

Grated Bottle Gourd – ½ kg
Sugar – 1 cup
Milk – 1 lt
Cashew Nuts & Dry Grapes – ¼ cups
Cardamom Powder – 1 tsp
Salt – a pinch

Method

Peel the bottle gourd / lauki and grate it. Pressure cook the grated lauki with 1 cup of milk till 3 whistles comes out. Let it cool down. Drain away the milk.

In pan heat ghee, add dry nuts and grapes. Saute 2 minutes on a low flame and keep the fried nuts aside.

Add the boiled lauki to the same pan, Mix it up properly and cook on a low flame for around 5 min.

Now boil milk in a separate pan. Let the milk boil it reduces to ¾ of its original quantity.

Now add the cooked lauki to the pan and mix it up. Continue to simmer the kheer for another 5 minutes.

Then add sugar and stir the kheer for 3 to 4 minutes. Finally add cardamom powder with this kheer.

Garnish with cashew and dry grapes. You can refrigerate this yummy kheer for an hour or more then serve!!!
