Egg Fried Rice

It’s simple and easy fried rice which is a great lunch box because it is dry and easy to carry. I have added minimal spices and actually quite nutritious. Kids love this dish because of fewer spices. You can add any vegetables as per your wish. Try this simple recipe on your week ends and enjoy well!

Ingredients

Eggs – 3
Basmati Rice – 2 cups
Finely Sliced Onion – 1 cup
Finely Chopped Garlic – 4 pods
Minced Ginger – 1 inch
Finely Sliced Carrots – 1 cup
Chopped Beans – 6
Halved Green Chillies – 3
Pepper Powder – 2 tsp
Cinnamon Sticks – 2
Fennel Seeds – 1 tsp
Salt as per taste
Chopped Coriander leaves - few
Butter – 2 tsp

Method

Chop all the vegetables and keep them ready. The rice should be washed and ready to cook.

Heat butter in a pressure cooker, Season it with fennel seeds and cinnamon. Then add onions, saute them until turn gold brown and transparent.

Then add the ginger garlic to the onions. Cook for two minutes and then add chopped vegetables.

Beat the eggs with pepper powder and scramble them in a pan, Do not over cook.

Mix well and cook the vegetables for 5 minutes on a low flame. Add chillies and cook for another 2 min.

Now add the eggs and stir it in slowly. Cook for 3 minutes and add the rice. Mix well and cook for about 5 minutes.

Add 4 cups of water and salt. Cover the lid and cook till 2 whistles comes out.

Garnish with coriander leaves. And your dish is ready to serve now!
