Spicy Okra/Bhindi Fry

It’s different kind of recipe, so easy and simple to prepare. I have not added more ingredients. If you have this curry with fried cashew, it will give nice taste. You can add fried peanuts. It will be crispier. So we can have this dish without any main dish. 

This should be one of the starters. Enjoy this dish with hot steamed rice / variety rice/ Kuzhambu sadam/ curd rice…
Ingredients
Okra / Lady’s finger / Bhindi – ½ kg
Cumin Powder – 2 tsp
Crushed Pepper – 2 tsp
Chopped Onions – 1 (Big)
Crushed Ginger and Garlic – 1 tsp
Dry Cashew Nuts – 2 tsp
Pepper Powder – 1 tsp
Cumin Seeds – ½ tsp
Curry Leaves - few
Salt to taste
Oil
Method
Clean and wash the okra, dry them, chop tip and tail ends. Make three to four slices by using knife. Don’t cut into small pieces.
Heat oil in a pan, add cumin seeds and let them brown. Add curry leaves and chopped onions and saute well.
Then add sliced okra pieces and fry in oil. If you are not frying well, then it should be mushy. So make sure whether it’s fried well.
Now add crushed ginger and garlic, cumin powder, pepper powder, salt and crushed pepper. Mix well.
No need to add water, if you need sprinkle water or oil. Keep fry on a low flame for about 5 to 10 min and cook till the okra becomes soft.
Heat oil in a pan, add cashew nuts and fry till it gets slight brown color and mix it with okra.
Switch off the flame and serve with hot steamed rice or curd rice.
