This is a healthy and tasty
recipe. The taste should be different from the normal egg curry. This goes well with
jeera rice/ghee rice/ veg or egg pulao/roti/chapatti/dosa/idli…
Ingredients
Chopped Green Chilli – 2
Eggs – 6 (Boiled & Halved)
Chopped Ginger – 1 tsp
Chopped Garlic – 2 tsp
Thinly Sliced Onions – 1 cup
Chopped Tomatoes – 1 cup
Chopped Cucumber – 1 cup
Cumin Seeds – 1 tsp
Salt to taste
Pepper Powder – 3 tsp
Method
In a kadai, heat oil. Add Cumin
seeds and sauté it for few sec. Then add chopped green chilli, ginger and
garlic and fry for few min.
Now add onions and fry till it
becomes translucent. Add chopped tomatoes and fry till it becomes mushy.
Add chopped cucumber pieces and
salt. Then close the lid and keep cook for another 10 to 15 min on a low flame.
Then add pepper powder and
sprinkle some water. Give a nice mix.
Finally add the eggs into this
cucumber masala. Make sure the spices should coat well with eggs.
Switch off the flame. Garnish
with chopped coriander leaves and cucumber slices.
Serve hot with rice/chapatti…
