Rava Idli



Rava Idli is a very popular and famous South Indian recipe. It is very simple to prepare and tasty food. Mostly kids love this. Normally we used to prepare rava idli than normal one. Why can’t you put some effort to make this super dish at your home itself?


This goes well with coconut/mint/onion/tomato/coriander chutney and sambar… Here is the recipe… Have fun and be healthy…

Ingredients
Rava /Sooji/Semolina -1 cup (Roasted)
Curd - 1 cup
Salt as required
Chopped Coriander leaves – 1 cup
Cashew nuts – 3 tsp
Finely Chopped Carrot -1
Baking soda - 1/4 tsp
Oil -1 tbsp
Eno – 1 tsp (Fruit Powder)
To Temper

Mustard Seeds- 1 tsp
Asafoetida/hing - a pinch
Urad dal - 3/4 tsp
Finely Chopped Green chilli - 2
Finely Chopped Ginger - 1 inch piece
Chopped Curry leaves - few
Method

Heat oil in a kadai /pan, add mustard seeds, when mustard splutters, add hing and urad dal.

Add cashew nuts, ginger, green chilli and curry leaves and sauté it for few seconds.

Then add rava and roast it nicely for a few minutes. 
Allow it to cool. Once it done, add curd, finely chopped coriander leaves, carrot, baking soda and needed salt.
Add water little by little and mix it well without lumps. The batter should neither be thick nor thin. Let the rava idli batter rest for 30 minutes.

By using idli cooker or idli pan, make soft and tasty rava idli is ready to serve.
Serve this rava idli with any chutney/sambar.
