Cilantro/ Coriander Rice

It’s a tasty, quick and satisfying rice dish with fresh coriander leaves. This is also a perfect lunch box for kids. I have used only few ingredients and very easy to prepare.

This goes well with any fry/ raita/ papad. I have served this with Bombay Aloo Masala.
Ingredients

Basmati rice - 2 cup (Cooked)
Coriander leaves - 1 cup
Chopped Onions -1 cup
Ginger - 1 inch piece
Green chilli - 2-3
Salt to taste

To Temper

Oil -1 tbsp
Jeera seeds -1 tsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Roasted Peanut – 2 tsp
Dry Red Chilli – 2
Method

In a blender add coriander leaves, green chillies and ginger by adding little water into a smooth paste.
Heat oil in a pan, add mustard seeds, urad dal, red chilli, cumin/jeera seeds,  and saute it for few seconds.
Add finely chopped onions and saute till it turns translucent. Now add roasted peanuts.
Then add the ground paste of coriander leaves, and saute till the raw smell goes and oil separates.
Mix rice and serve. Then switch off the flame.  Garnish with coriander leaves.
