This is another simple recipe. Carrot podimas is a healthy
and easy recipe. This looks very colorful. It goes very well with any kuzhambu
rice/Chapatti/Roti/Bread…
Ingredients
Chopped Carrots – 1 cups
Finely Chopped Onions – ½ cup
Finely Chopped Ginger – 2 tsp
Soaked Channa Dal – ¼ cup
Chopped Green Chilli – 2
Salt to Taste
(To Grind)
Grated Coconut – ¼ cup
Fennel Seeds – 1 tsp
(To Temper)
Mustard Seeds – 1 tsp
Cumin Seeds – ½ tsp
Urad Dal – ½ tsp
Hing – a pinch
Curry Leaves – few
Chopped Coriander Leaves – few
Coconut Oil – 1 tsp
Method
In a vessel, add chopped carrots, onions, salt and soaked
channa dal and cook this till it becomes soft. Once it done, then mash it well.
In a blender add grated coconut and fennel seeds and make it
as a coarse paste.
In a pan, heat oil and add the tempering ingredients one by
one and saute it for few min. Now add chopped ginger and green chilli and fry
this for few seconds.
And transfer this veg bowl. Now add the coarse paste of
coconut into this curry.
Then saute this for another few seconds and garnish well with
chopped coriander leaves.
