Lauki Peppers (Bottle Gourd Simla Mirch)

Lauki Pepper is a delicious dish. This should be prepared with bell peppers. And I have added some spices. This is another simple and yummy dish.
This goes well with steamed rice/ chapatti/Roti/Idli/Dosa…
Ingredients
Chopped Lauki/ Bottle Gourd – 2 cups
Chopped Bell Peppers – 1 cup
Chopped Tomato – 1 (big)
Chilli Powder – 1 tsp
Chopped Coriander Leaves – 1 bunch
Salt to taste
Ginger Garlic Paste – 1 tsp
(To Temper)
Mustard Seeds – ½ tsp
Hing – a pinch
Cumin Seeds – ½ tsp
Chopped Curry Leaves – few
Oil – 2 tsp
Method
 Heat oil in a pan, add the tempering ingredients which are under to temper one by one and saute it for few sec.
Then add ginger garlic paste and turmeric powder into that. Mix well.
Add chopped lauki with little salt and close the lid and cook it for 5 minutes on low flame.
Add chopped bell peppers and chilli powder. Then cook this till bell pepper is tender.
Then add chopped tomatoes and chopped coriander. Sprinkle water into that.
Then let it cook for 3 to 5 min on medium flame. Garnish with chopped coriander leaves.
