Mango Pachadi is a traditional dish. Typical mango pachadi should have all the combination of tangy, sweet and bitterness. Unfortunately I didn't get neem flowers. If you get these, you can add into this dish.
This dish can be prepared almost all South Indian occasions. So enjoy with great dish.Ingredients
Peeled, cubed Mangoes – 1 cup
Jaggery – 2
Salt – a pinch
Grated Coconut – 5 tsp
Neem Flower (optional)
(To Temper)
Mustard Seeds – ½ tsp
Urad Dal – ½ tsp
Dry Red Chilli – 2
Chopped Coriander Leaves – few
Chopped Curry Leaves – few
Coconut Oil – 1 tsp
Method
In a pressure cooker add mango pieces, a pinch of salt and enough water. Then pressure cook it till second whistles comes out.In a vessel, add jaggery with little water and cook it till completely dissolves in water.
In a pan, heat oil. Then add all the ingredients which are under “to temper” and saute it for few min.
Then add mashed and cooked mangoes into that. Mix it well. Then pour the jaggery syrup with grated coconut. Then let it cook for few minutes.
Yummy mango pachadi is ready to serve!!!

Eggless Banana Cake
This is very easy and tasty eggless banana cake. I have
used only few ingredients. It’s really a simple and delicious cake.

Try this yummy cake and enjoy!!!
Ingredients
All Purpose Flour/ Maida – 4 cups
Bananas – 4 (big)
Sugar – 1 ½ cups
Salt – a pinch
Unsalted Butter – 1 and 1/2 cups
Baking Soda – 1 tsp
Vanilla Extract – 1 tsp
Method
In a bowl add unsalted butter, salt, baking soda, vanilla
extract and mix it well.
In a blender add sugar and grind it as coarse powder.
In another bowl, add all purpose flour with powder sugar
and mix well. Then keep it aside.
Take another bowl and add all the peeled bananas and mash
it well using potato masher.
If you want you can grind it in blender.
In another big bowl, combine everything from all the
bowls one by one. Make sure the cake batter should not make any lumps.
Preheat the oven to 350 degrees. Apply butter to cake pan,
add spread the all purpose flour little bit. And remove the excess.
Then add the cake batter into this pan. Let it bake for
45 min. Then Let it cool for 10 to 15 minutes.
The yummy and delicious cake is ready to serve!!!
Moong Dal Ladoo
It is very healthy, easy to make. I have used sugar.
But you can use jaggery instead of sugar. It makes a perfect snacks and healthy
snacks.
My son loves this very much. It's called as seeni urundai. I hope you will enjoy with this yummy
ladoo…Ingredients
Moong dal/Pasi paruppu – 1 cup
Coarse Sugar -1 cup
Melted Ghee - ½ cup
Cardamom powder -1/4 tsp
Coarse Sugar -1 cup
Melted Ghee - ½ cup
Cardamom powder -1/4 tsp
Fried Nuts & Raisin – ¼ cup
Salt – a pinch
Method
Dry roast moong dal until you get a nice aroma of roasted
moong dal. After it cools, grind it to a fine powder. Moong dal flour is ready
now.
In a blender, grind sugar to a fine powder. Then keep it aside.
In a bowl mix together, moong dal flour, salt, fried cashew
nuts & raisin, sugar powder and cardamom powder. Keep melted ghee in a bowl
of hot water.
Now add hot melted ghee little by little to this
mixture and make balls.
Yummy and delicious moong dal ladoo is ready to serve!!!

Roasted Gram Ladoo
It is a famous south Indian recipe. This is very simple and
easy to prepare. This is also called Maladu or Maa ladoo.

Ingredients
Roasted Gram/Pottukadalai – 1 cup
Sugar – ¾ cup
Cardamom/Elachi Powder – 1/4 tsp
Salt – a pinch
Cashew Nuts & Raisin – ¼ cup
Method
Heat a pan, add roasted gram and saute it for few minutes.
Let it cool for some times. Then grind it as a fine powder.
Then take it out. In the same pan, add sugar and grind it as
a coarse powder.
Heat ghee in a kadai, and add these flours one by one and saute it for few seconds.
Add elachi powder, fried cashew nuts and raisins and salt.
Switch off the flame. Now add the melted ghee little by
little and mix well with your fingers until you can shape it into a ball.
Store this ladoo in an air tight container for a few days at room temperature.

Sooji Ladoo
Sooji ladoo is one of
the easiest and tasty ladoo. This is a delicious sweet that is made from sooji,
fried nuts and ghee.
These are traditional sweet that is also made during many
festivals. So I hope you can enjoy with this great dish.
Ingredients
Rava/Sooji/Semolina – 1 cup
Sugar – 1 cup
Cardamom/Elachi – a pinch
Cashew Nuts & Raisins – ½ cup
Salt – a pinch
Ghee – 1 cup
Method
Heat
3 tsp of ghee in a kadai. When the ghee turns hot, dry roast cashew nuts and
raisins. Keep it aside in a plate.
Add
the remaining ghee and roast the Rava till its get well roasted or until the
aroma starts coming out.
Let
it cool for few min. Then grind it as a coarse powder. In the same blender add
sugar and grind it as fine powder.
In
a big bowl, add all the powders with fried nuts and raisins with extra ghee.
Then make it as lemon sized balls.
Yummy
Rava ladoo is ready to serve!!!

Sesame Ball / Ellu Urundai
It’s another easy and tasty urundai. Instead of sugar, I have
used jaggery to prepare this sweet. Sesame seeds have many medical beneficial.
It has rich source of calcium.
Black sesame seeds also have high amount of
protein, iron,copper and magnesium. That’s why it’s advisable to give
ladies, especially during menstruation times.
Ingredients
Raw Rice – ½ cup
Sesame Seeds – 1 cup
Roasted Gram/Pottukadalai – ½ cup
Jaggery – 2 cup
Salt a pinch
Cardamom/Elachi Powder – ½ tsp
Ghee – 3 tsp
Fried Cashews – 3 tsp
Method
Soak raw rice for at least 1 to 2 hours then remove the
excess water and keep it in a cotton cloth. Let it be dry for some times.
Heat kadai, add roasted gram and saute it for few minutes
till the nice aroma comes out.
Then take it out and let it cool for 5 to 10 minutes then
make it as fine powder and keep it aside.
In the same kadai, add sesame seeds and dry roast it till
the color changes slightly on a low flame.
Once it done, let it cool and take 5 tsp of sesame seeds,
keep it in separate bowl. The remaining seeds should be grind as coarse powder.
Then take the rice and dry roast for few minutes. Once it
done, grind it as fine powder.
By mean time, in a vessel add little water with jaggery and
heat it till this gets thicken and the color changes.
Once you get the good consistency then switch off the flame.
In a bowl add roasted gram powder, rice flour, sesame powder
with little salt, and elachi powder and give a nice mix.
Then add this into jaggery syrup and mix it well. Now add
sesame seeds (Kept it in a bowl) and fried cashew nuts.
Then grease your hands with ghee and make balls out of it
when still hot.
Store it in an air tight container for long day purpose. And
enjoy this tasty sesame balls!!!

Besan Ladoo
Besan Ladoo is one of the
easiest sweets you can make to celebrate. This is very popular in Maharashtra. Make
sure you use low heat and stir the flour and ghee mixture constantly to prevent
burning.
When
making the ladoos if they are too dry, add extra ghee to the mixture. That will
make soft and tasty. Store ladoos in an air tight container, they will keep for
a week.
Ingredients
Besan
/Chickpea / Gram Flour – 1 cup
Sugar
– 1 cup
Ghee
– 100 g
Pista
Powder – 2 tsp
Cashew
Powder – 2 tsp
Salt
– a pinch
Method
In
a kadai, add ghee bring it to boil then reduce the flame and add besan mix well
till changes its color.
In
a blender add sugar and make it as fine coarse powder.
Once
the besan is done then add sugar mix well. Add pista and cashew powder on it.
Now
add cardamom powder mix well. Then switch off the flame and let it cool down
then make into small ladoos.
Ladoos are ready to
serve. Enjoy well

Urad Dal Ladoo
It’s a popular and healthy ladoo. This is very easy to
prepare and the tastes yummy and highly delicious. It is high in protein.
This
is one of the favorite foods by lord Ganesha. So I hope you can make this ladoo
and enjoy with your festival times.
Ingredients
Urad Dal – 1 cup
Sugar – ¾ cup
Rice – 2 tsp
Ghee – 1 cup
Dry Fruits – ½ cup
Salt – a pinch
Cardamom – 1/ 4 tsp
Method
Take a pan, dry roast urad dal till golden brown in color. Then add rice and roast for another 3 minutes on a flame.
Switch off flame. Then take it out and let it cool for few
minutes. And grind it as a fine powder.
Then take sugar and and grind it as a coarse powder and keep
it aside.
In the same pan, heat ghee. And add dry fruits and saute it
for few sec.
Now add urad dal coarse powder and saute it for few min on
low flame.
And add coarse sugar powder and mix well. Finally mix all ingredients well and add ghee.
Take a small portion of mixture in your hands and press it
to give it a small round ball shape.
Healthy & yummy ural dal ladoos are ready.

Sabudana Vada
It’s a tasty and crispy vada. This is very popular in
north Indian restaurants. And it is extremely popular during Dussera festival
time among the Maharashtrians.
Sabudana /Sago/Javvarisi – 1 cup
Chopped Onions – 1 (big)
Chopped Green Chilli – 2
Chilli Powder – ¾ tsp
Rice Flour – 2 tsp
Chopped Coriander Leaves – ½ cup
Grated Potato – 1
Chopped Ginger – 3 tsp
Chopped Curry Leaves – few
Chat Masala – 1 tsp
Salt to taste
Oil for deep fry
Method
Soak sabudana in water for at least 3 hrs. Remove the excess water from grated potato.
In a bowl, add grated potato, chopped green chilli, coriander leaves, curry leaves, chat masala, red chilli powder, and ginger, salt, 2 tsp of oil and mix well.
Then make it as dough and prepare small balls. Then make this shape as vada.
Heat oil in a pan, and add this vada into oil. Then deep fry it till get golden brown in color.
Use Paper towel to remove excess oil. Then serve hot with any chutney or any sauce.

Spicy Chicken Drumstick
This is another yummy and tasty dish. Normally we used to
deep fry. But I have used little oils to fry the chicken. For minimum oil, no
need to worry about the cholesterol.
Ingredients
Chicken Leg Piece – 4
Sliced Onions – 1
Chilli Powder – 2 tsp
Pepper Powder – ½ tp
Yogurt – 1 tsp
Coriander Powder – 1 tsp
Turmeric Powder – a pinch
Cumin Powder – ¼ tsp
Fennel Powder – ¼ tsp
Lemon Juice – 1 tsp
Salt to taste
Ginger Garlic Paste – 1 tsp
Oil for fry
Chopped Coriander Leaves – few
Method
Wash and clean the chicken legs and make a small slits on
each leg piece.
In a bowl, add chilli powder, turmeric powder, salt and
lemon juice. Then mix well into a paste.
Marinate the chicken legs with this paste.
In another bowl, add yogurt, ginger garlic paste, pepper
powder, cumin powder, coriander powder and a tsp of oil. Then give a nice mix.
Cover the chicken pieces with this masala mix and refrigerate
these marinated legs for 2 to 3 hours.
In a pan, heat 2 tsp of oil. Add sliced onions and fry for
few minutes. Then add the chicken legs and keep fry on low flame.
It will take some times to cook the chicken completely. I
haven’t used more oils. So check the simmer and keep cook till the chicken
becomes soft and cooked fully.
Once it done then switch off the flame. And garnish with chopped coriander leaves.
