Drumstick Leaves Soup/ Murunkai Keerai Soup/முருங்கைக்கீரை சூப்

This drumstick leaves soup is easy to prepare and is very nutritious. Drumstick leaves which is commonly known as Moringa leaves has a lot of medicinal benefits, rich in iron and protein, very good for your eyes too. 

This soup is very refreshing and usually served during lunch. They are rich in iron and it should be included in diet at least once or twice per week. Pregnant ladies can consume it more often because of its rich iron content.

Ingredients

Drumstick Leaves - 1 Cup

Finely Chopped Shallots - 10 / big onion - a handful

Crushed Ginger & Garlic - 2 tsp

Chopped Tomato - 1

Mustard Seeds - 1 tsp

Cumin Seeds - 1 tsp

Salt to taste

Water - 1 ltr

Fresh Ground Pepper - to taste

Oil - 1 tsp

Method

Heat oil in a pan. Add mustard seeds, cumin seeds and dry red chilli then sauté it for few seconds.

Then add crushed ginger garlic and sauté it for few seconds.

Add chopped onions and fry for few minutes. Now add chopped tomatoes.

Cook until it becomes mushy. Then add cleaned and washed drumstick leaves.

Sauté it for few minutes and add required water and close the lid and cook it completely.

Then add required salt and pepper and switch off the flame and serve hot!
