Chayote Stir Fry

This is a simple and easy recipe which goes well with both rice and roti. It is regionally associated with Southern United States. 
A further possible source of the name is the ingredient chayote, which is itself known as chow chow in India. 
Ingredients
Chayote (Chow Chow) – 1 (Big)
Chopped Onion – 1 (Big)
Chopped Garlic – 3 pieces
Grated Coconut – ¼ cup
Turmeric powder – ½ tsp
Salt to taste
Chopped Coriander Leaves - few
For Seasoning
Oil – 1 tsp
Mustard Seeds – ½ tsp
Urad Dal – ½ tsp
Bengal Gram – ½ tsp
Red Chilli – 3
Curry Leaves - few
Method
Peel the skin of chayote and remove the seed. Cut into small cubes and keep it aside.
Heat oil; add mustard seeds, when it splutters add red chilly, curry leaves, urad & Bengal dals turn golden brown color, add onions and garlic fry till it turns transparent.
Then add chopped chayote, salt, turmeric and cook covered till soft (No need to add water).
Finally add grated coconut. Garnish with coriander leaves. Serve it with hot steamed rice or roti.
