Dum Aloo Amritsari



It is the authentic Punjabi recipe and mouth-watering one. You can also use baby potato. In this recipe the potatoes are first deep fried and then cooked in spicy gravy. This goes well with rice/Chapatti/rotti/Naan...
Ingredients

Potato – 2 (Big)
Chopped Onion – 2 (Big)
Chopped Tomato – 2 (Big)
Cumin Seeds – 1 tsp
Ginger Garlic Paste – 1 tsp
Chilli Powder – 1 tsp
Asafoetida (Hing) – a pinch
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Turmeric Powder – 1 tsp
Garam Masala Powder – 1 tsp
Salt – as per taste
Oil – 2 tsp
Coriander Leaves

Method

Peel and cut the potatoes in to small cubes. Keep these potatoes in salt water for 15 min. After that heat oil in a pan, deep fry the potatoes on low flame till they turn gold brown in color.

Heat oil in a pan, add cumin seeds and hing. Fry for about a min. Add onion and fry till the turn gold brown color. Add ginger garlic paste and fry about 2 to 3 min.

Then add chopped tomatoes, salt, cumin powder, coriander powder, turmeric powder, red chilli powder, and cook for about 5 min till the tomatoes turn mushy.

Add a cup of water to it and mix well. Now add the fried potatoes. Simmer for 5 min. Add garam masala powder and stir well. Garnish with coriander leaves.
