Tofu Fried Rice

Tofu fried rice is a quick lunch recipe; it is dry & easy to carry. If you don’t have any idea about what to cook, this will helpful to manage the day without any hectic job. Now I can see more brightness in all your face. Of course, it takes to prepare less time compare to chicken fried rice.

Today I don’t have any vegetables except carrot & beans. So I thought an idea to prepare this simple & healthy fried rice.

I have added minimal spices and it is actually quite nutritious. This goes well with raita, papad & ketch up…


  
Ingredients

Basmati Rice – 2 cups
Tofu – 250 g
Sliced Onion – 2 (Big)
Crushed Ginger – 1 piece
Garlic Gloves – 5
Chopped Carrot – 1 cup
Chopped Beans – ¼ cup
Sliced Green Chilli – 4
Black pepper Powder – 1 tsp
Butter – 2 tsp
Cinnamon – 2
Bay leaf – 1
Cumin Seeds – 1 tsp
Clove – 2
Cardamom – 4
Coconut Milk – 1 cup
Salt

Method

Soak rice with water, salt, cardamom and coconut milk about 30 min.

Take tofu, and then cut into small pieces and keep it separately.

In a pressure cooker, add ghee. Once it heated, add bay leaf, cinnamon, clove one by one. Then add cumin seeds. Fry well. Add tofu with little bit salt and fry well with butter.

Then add ginger, garlic, green chilli & onion. Fry until the onions turn golden brown in colour & transparent.

Then add other vegetables and keep cook for about 5 min.

Now add the soaked rice with water & coconut milk into the pressure cooker. Keep cook for 2 whistles & 5 min simmer.



Serve hot tofu fried rice with raita, papad…
