Green Plantain Fry ( Vazhakai Varuval)

It's a very easy and simple dish. This is my mom's recipe and I love the most. Many of them don’t like to have this veggie. But I have added crushed ginger garlic. It helps to control the gastric problem. So you can have without any worries. This goes well with any steamed rice/ curd rice/ kulambu/ variety rice…
Ingredients
Green Plantain - 2 (big)
Chopped Onion - 1 (big)
Chopped Tomato - 1 (big)
Coriander Powder - 1 tsp
Chilli Powder - 1 tsp
Crushed Ginger garlic - 2 tsp
Pepper powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Tamarind juice - 3 tsp
Vengaya Vadagam - 1 tsp
Curry leaves - few
Coriander Leaves - few
Salt to taste
Oil as required
Method
Wash and peel the skin off plantain and cut into small pieces and keep it in a bowl with water (To avoid changing the color)

In a pan heat oil, add vengaya vadagam, curry leaves and then add chopped onions, crushed ginger garlic and fry about 3 min or till it becomes mushy.
  
Now add the plantain pieces with salt and fry in oil for about 2 to 3 min. Then add chopped tomato and fry till it becomes mushy.

Now add tamarind juice and 1 cup of water. Then add turmeric powder, coriander powder, and chilli powder and keep cook till it cooked fully.

Then add pepper powder and chopped coriander leaves and mix it well. Keep fry for another 2 min. Sprinkle some oil, if it is needed. Switch off the flame. Garnish with coriander leaves.
