Carrot is rich in Vitamin C. It helps to improve eyesight,
maintain oral health, fight diabetes and prevent heart diseases. It is another
easy recipe.
This goes well with egg/fish/chicken fry, potato curry,
papad or raita.
Ingredients
Basmati Rice – 2 cups
Thin Sliced Carrots – 5
Sliced Onion – 2 (Big)
Sliced Green Chillies - 4
Crushed garlic – 1 tsp
Hopped Ginger – 1 tsp
Turmeric powder – 1 tsp
Red Chilli Powder – 1 tsp
Pepper Powder – ½ tsp
Cumin Seeds – ½ tsp
Coriander leaves - few
Pulav Masala (or) Briyani Masala – ½ tsp
Coconut Water – ½ cup
Water – 2 ½ cups
Chopped Capsicum – 1
Cardamom - 3
Ghee – 2 tsp
Salt
Oil
Method
Soak rice with water, salt, cardamom and coconut milk about
30 min. Then boil it on a low flame till the second whistle comes. Once done,
take the rice and spread it over a plate. Keep it aside.
Heat ghee in a pan, add cumin seeds, ginger, garlic,
capsicum and fry for about 3 min. Then add onion keep fry until the onion
becomes mushy. Now add carrot and sauté well with salt and sprinkle some water.
Mix well and saute on a low flame until the vegetables
become little tender. Now add the masalas, pepper powder, pulav masala, chilli
powder, and turmeric powder. Then fry for 2 to 3 min.
Slowly add the boiled rice, mix it well so that the masala
is spread evenly with the rice. Cook on a low flame for 3 min more.
Finally add the chopped coriander leaves & garnish well.
Now carrot rice is ready to serve.
