Spicy Egg Coconut Masala

It is a delicious egg coconut masala recipe that has blend of Indian spices and coconut paste. It’s very simple & easy dish. It would have tasted more flavourful with freshly grated coconut.

This goes well with idiyappam, dosa, idli, steamed rice, chapatti or roti…



Ingredients

Egg – 6
Onion – 1 (big)
Tomato – 1 (big)
Green Chilli – 4
Ginger Garlic Paste – 1 tsp
Coconut Paste – ½ cup
Coriander Powder – 1 tsp
Chilli Powder – 1 tsp
Turmeric Powder – ½ tsp
Cumin Seeds – ½ tsp
Bay leaf – 1
Cinnamon – 1
Clove – 2
Coriander leaves – few
Salt
Oil

Method

Wash the eggs, and boil in water with little salt and oil then cut into two halves then keep it aside in a separate plate.

In a blender grind onion & tomato separately and keep it aside in a bowl.

In a pan, heat oil. Then add bay leaf, clove, cinnamon, and cumin seeds. When the seeds start to splutter, add the grounded onion paste and cook on a medium flame till it turns golden brown.

Now add the ginger garlic paste, green chillies, turmeric powder and salt. Mix well and cook on a medium flame for another min.

Now add the tomato paste and cook for 3 min more. Then add coriander powder, chilli powder, and coconut paste.

Then mix well and cook on a medium flame for 5 min. Now add the two halved boiled eggs into the pan. Then keep cook for about 3 min.

Garnish with chopped coriander leaves.
