Mango Rice

Mango Rice is one of the easiest recipes. It needs only fewer ingredients. But the taste is really good.
In this dish, I have added grated mangoes. It gives a tangy taste to this dish.
You can prepare this dish, with left over rice also. Mango rice is a classic dish prepare with fluffy rice.
This goes well with any veg / non veg fry…
Ingredients
Cooked Rice – 2 cups
Raw Mango – 2 cups (Peeled & Grated)
Roasted Peanuts – 5 tsp
Grated Coconut – 5 tsp
Dry Red Chilli – 4
Turmeric Powder – ½ tsp
Curry Leaves - few
Salt to taste
Oil –2 tsp
(To Temper)
Mustard Seeds – 1tsp
Cumin Seeds – 1 tsp
Hing – ¼ tsp
Roasted Peanuts – 2 tsp
Curry Leaves – few
Chopped Coriander Leaves – few
Ghee – 2 tsp
Method
In a pan, heat oil. Add red chilli, grated coconut and 1 cup of grated mango saute for few min on a medium flame.
Then switch off the flame let it cool down and grind it as a coarse paste with turmeric powder and salt.
Melt ghee in a pan, add the ingredients which are under “to temper” and saute for few seconds. Then add the ground paste and saute for a min.
Add the cooked rice and mix well. Add the remaining grated raw mango, salt and mix well.
Garnish with chopped coriander leaves and serve hot!!!
