Hot & Sour Chicken Soup

This is a delicious hot and sour chicken soup. It is one of the most popular soups in Chinese Cuisine.
The chicken and some of veggies are added to make this yummy soup.
In India, this soup is most popular as an Indo-Chinese dish. This contains both spicy and sour taste. If you wish you can add a pinch of sugar in it.

Ingredients

Chicken – 300 g
Oil – 1 Tsp
Butter – 3 tsp
Crushed Garlic – 2 tsp,
Crushed Ginger – 2 tsp,
Thinly Sliced Carrots – 1/2 cu
Frozen Corn – 1/4 cup
Chopped Green Beans – 1/4 cup,
Thinly sliced Celery – 1/4 cup,
Chopped Cauliflower – 1/4 cup,
Thinly sliced Chopped Cabbage – 1/2 cup,
Chopped Mushroom – ¼ cup
Soy Sauce – 2 tsp
Red Chili Sauce – 1 tsp
Black Pepper – 2 tsp
Vinegar – 2 Tsp
Corn Starch – 3 Tsp(mixed with a little cold water)
Beaten Egg – 1 (optional)
Chopped Spring Onions – ¼ cup
Chopped Mushroom – ¼ cup
Green Chilli Sauce – 1 tsp
Method
Cook chicken with chopped green chilli and salt. Once it done, take it out and cut it into small pieces.
Heat Oil and butter in a pan, add ginger and garlic and saute for few sec.
Add corn, green beans, carrots, celery and cabbage and saute for 2 minutes.
Now add the chopped chicken pieces and sauté well on a medium flame.
Add mushrooms, 1/2 of the green onions, chili Sauce, soya sauce and vinegar then bring to a boil.
Mix little water with the corn starch and add it to the soup then bring to a boil.
Slowly add in beaten egg and keep stirring to form strands and cook for 1-2 minutes.
Garnish with Spring Onions and serve hot!
