Goan Egg Curry

This egg curry is yet another simple recipe. It is very popular in Goa. Every egg lovers would definitely enjoy with this curry.


It is very easy to make Goan hard boil egg curry, where the hard boiled egg is cooked Indian spice curry.

This is a mouthwatering egg curry and is famous in Goan cuisine. I have halved the boiled eggs and dropped into a spicy coconut based curry.
It goes well with roti/naan/dosa/idli/any meals…

Ingredients
Chopped Onions – 2 cups
Chopped Green Chilli – 3
Chopped Tomatoes – 1 cup
Garam Masala – 1 tsp
Turmeric Powder – 1 tsp
Tamarind Water – 1 cup
Boiled and Halved Eggs – 6
Coconut Cashew paste – 2 tsp
Oil – 2 tsp
Salt to taste
(For dry roast & grind)
Cumin Seeds – 2 tsp
Coriander Seeds – 2 tsp
Poppy Seeds – 1 tsp
Garlic – 6 pods
Chopped Ginger – 2 tsp
Peppercorn – 1 tsp
Dry Red Chilli – 4
Grated Coconut – ½ cup
Curry Leaves – few
Chopped Coriander Leaves - few
Oil – 2 tsp
Method
In a pan, heat oil. Add all the ingredients which are under “for dry roast and grind” and let it cool down for 10 minutes then grind it as a coarse paste.


Heat oil, add onions and curry leaves and stir fry, till the onions are a golden color. 

Add the tomatoes and stir fry till fat separates, and add the ground paste, turmeric, garam masala and salt, and stir fry till fat separates again. 

Add about 1 cup of tamarind water and another cup of plain water then mix well. 

When it comes to a boil, lower heat and simmers 10 minutes. 

Add coconut cashew paste, bring to a boil, and then simmer 3 minutes. 

Add eggs and serve hot garnished with the coriander leaves.
