Schezwan Egg Noodles

It’s a very easy Indo chinese recipe prepared with vegetables, eggs, noodles with schezwan sauce. We (me, my sister & son) are the great fan of noodles. It is very simple recipe which is made of home made schezwan sauce. It gives nice flavour to the noodles.

It is very spicy and easy to cook and is a great option with some guests arrives unexpectedly. The schezwan sauce en robes the boiled noodles and stir fried vegetables and makes for a healthy and tasty snack or Tiffin choice for all, especially children.



Ingredients

Noodles – 1 packet
Chopped Spring Onions – ¼ cup
Sliced Onion – 1 (big)
Mixed Vegetables (beans, carrot, capsicum, cabbage) – 2 cups (julienne shape)
Egg – 2
Pepper Powder – 1 tsp
Soya Sauce – 1/ tsp
Schezwan Sauce – 1 ½ tsp
Oil
Salt

For Schezwan Sauce

Dry red chilli – 10
Grated Ginger – 1 tsp
Garlic Gloves – 10
Red chilli sauce (or) chilli paste – 1 ½ tsp
Soya Sauce – 1 tsp
Vinegar – 1 tsp
Tomato Sauce – ½ tsp
Oil
Salt

Method

To prepare schezwan sauce, soak red chilli in warm water for about 10 to 15 min. After that drain water from the red chillies and grind to a fine paste with garlic & ginger.

 In a pan, heat oil. Add this paste and sauté for 3 min, and then add red chilli sauce and sauté for another 2 min.

Now add soya sauce, tomato sauce, and 3 tsp of water then cook for a min. Then add vinegar and switch off the flame. Cool & refrigerate. It can be stored as for a week.

Take water in a kadai, add noodles and cook for 2 to 3 min. Do not overcook the noodles. Drain the water completely and pour cold water on the noodles.

Darin and then spread it on a plate. Toss 1 tsp of oil on the noodles. It’s helpful to prevent the noodles sticking to each other.

In a pan, heat 1 tsp of oil. Add onion and fry for 3 to 4 min, then add capsicums, salt and pepper keep fry for 2 min. Now break the eggs and transferred into this mix. Keep fry for a min. Then switch of the flame. Keep it as in a separate plate.

In the same pan, heat oil. Then add spring onion, and fry for 2 min. Now add other vegetables and toss them on a medium flame for about 5 min.

Add salt, pepper powder and mix it well. Then add the schezwan sauce and mix.

Finally toss noodles, vegetables & eggs on a low flame for about 2 to 3 min. turn off heat.






Serve hot & spicy schezwan egg noodles with tomato ketchup…
