Chicken Fried Rice
This is yummy and delicious rice dish. In this dish, cooked rice tossed with sautéed chicken pieces, veggies and scrambled eggs. Chicken fried rice goes well with chicken Manchurian.
Ingredients
Boneless Chicken Pieces – 1 Cup
Whisked Eggs – 3
Diced Onions – 1 Cup
Minced Garlic – 2 Cloves
Minced Ginger – 2 tsp
Frozen Peas – ¼ Cup
Cooked Rice – 2 Cups
Soya Sauce – 2 tsp
Sesame Oil – 1 tsp
Method
Chop the chicken into cubes. Sprinkle some salt over the chicken and mix to combine. Set the chicken aside for about 10 minutes.
Heat a large sauce pan over medium high heat. Swirl in tsp of oil and add the whisked eggs. Use a spatula to quickly scramble the eggs. Break the curds into smaller pieces and transfer the eggs to a plate.
Add another tsp of oil in a pan, add the chicken and cook for 4 to 5 minutes. Stirring occasionally and keep aside in a plate.
Swirl another tsp of oil into the pan over medium high heat. Add the diced onions and cook for a minute. Add the minced garlic and garlic, then cook until fragrant about 30 seconds. Then add the peas and saute it few minutes.
Add the rice to the pan on top of vegetables and stir to combine.
Drizzle the soy sauce and sesame oil over the rice and stir to incorporate. Stir in the cooked chicken and scrambled eggs. Stir well and cook for another 2 to 3 minutes and serve hot.
