Aratikaya Vepudu is an Andhra Style Raw Banana Dry Sabzi. It is a simple recipe but tastes amazing as such or when paired with rice and dal/rasam.
Ingredients
Raw Plantains – 2 (Slice plantains into lengthwise)
Finely Chopped Large Onions – 1
Ginger Garlic Paste – 1 tsp
Turmeric Powder – ½ tsp
Chilli Powder – 1 tsp
Coriander Powder – 1 tsp
Cumin Powder – ½ tsp
Dry Methi Powder/Kasoori Methi – a pinch
Cinnamon Powder – ¼ tsp
Grated Coconut – 3 to 4 tsp
Salt to taste
Chopped Coriander Leaves – few
To Temper
Oil – 3 tsp
Mustard Seeds – ½ tsp
Cumin Seeds – ½ tsp
Curry Leaves – few
Method
Bring water to boil add, chopped plantain pieces with little salt and turmeric powder and cook until 70 to 80 percent. Then strain the excess water and keep aside.
In a cleaned bowl add chili powder, coriander powder, cumin powder, methi powder, dry coconut, cinnamon powder, salt, 1 tsp of oil, ginger garlic paste, cooked plantains and coriander leaves then marinate it for about 30 minutes.
Heat oil in a pan, add the tempering ingredients one by one and saute it for few seconds.
Add chopped onions, salt and fry for few minutes. Then add the marinated raw plantain pieces and mix well.
Cook until the veggies are turned into crispy and tasty. Serv hot with steamed white rice, sambar rice or curd rice.
