Asparagus Stir Fry (Indian Style)


This is simple and quick stir fry prepared with asparagus. In this dish, asparagus is cooked with onion and red chilli and mixed with grated coconut. This goes very well with kuzhambu rice/curd rice.

Ingredients

Finely Chopped Asparagus – 1 Cup/1 bunch

Finely Chopped Onion – 1 (big)

Grated Coconut – a handful

Sal to taste

To Temper

Oil – 1 tsp

Mustard Seeds – ½ tsp

Cumin Seeds – ½ tsp

Dry Red Chilli – 2

Curry Leaves – few

Method

Heat oil in a pan, add mustard seeds and crackle it. Then add cumin seeds, dry red chilli and curry leaves and fry for few seconds. 
Add the chopped onions, salt and saute for few minutes. 
Then add chopped asparagus and fry well. Let it cook on low flame for about 5 minutes.

Add grated coconut and mix well then serve as hot.
