Carrot Beans Thoran

Carrot Beans Thoran is a famous dish in Kerala. This is a very simple side dish that’s served along with rice for lunch.

Ingredients
Chopped Carrots – 1 ½ cups
Chopped Beans – 1 cup
Chopped Onions – ½ cup
Channa Dal – 5 tsp
Sliced Green Chilli - 2
Salt to taste
(To Temper)

Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Dry Red Chilli – 3
Grated Coconut – 4 tsp
Coconut Oil – 2 tsp
Hing – a pinch
Curry Leaves – few
Method
Soak channa dal for about 30 minutes.
In a kadai, add chopped carrots, beans, sliced green chilli, channa dal and salt with little water. And cook till it becomes soft and cook the veggies fully.
In a pan, heat oil. Add mustard seeds and when they splutter, add urad dal, hing, curry leaves, whole dry red chilies and sauté till the urad dal becomes golden.
Add onions and sauté over medium flame till the onions becomes translucent.
Add the partly cooked carrot and beans, salt and mix well. Close the pan with a lid and cook for 3 to 4 mins.
Add grated coconut, mix well. Keep the pan closed with a lid for 2-3 mins.
Then switch off the flame. And serve with hot steamed rice.
