Jeera Egg Fry

This is a very simple and easy egg recipe. It gives a tremendous taste. I haven’t added many ingredients. I am sure the bachelors and workers who are running out of time to prepare any side dishes; you can definitely give a trial for this tasty and quick recipe.
                                 
This goes well with rasam rice/ jeera rice/pulav/ curd rice…
Ingredients
Boiled Eggs – 6
Thinly Sliced Onions – 2 (big)
Jeera / Cumin Powder – 3 tsp
White Pepper powder - 2 tsp
Chopped Green Chilli -2
Salt to taste
Chopped Coriander Leaves – few
Oil – 3 tsp
Cumin Seeds – 1 tsp
Chopped Curry Leaves – few
Method

Boil the eggs in water with half tsp of oil and salt (easy to remove the shell). Let it cool down. Then remove the outer skin and cut into four parts of each egg. Then keep it aside.

In a pan, heat oil. Add cumin seeds, saute for few seconds. Then add chopped green chilli, sliced onions and fry well.

Add little salt, few of chopped coriander and curry leaves then mix well.

Now add jeera powder, pepper powder and sprinkle some oil. Mix well.

The egg should be roasted well with oil. And the color changed as slight brown.

Then switch off the flame. Garnish with chopped coriander leaves.
