Kanda Poha

Kanda Poha is a very popular breakfast dish in Maharashtra. This is prepared with onion and potato mix.

The poha absorbs literally any liquid it is soaked in and become soft. So this becomes a very good medium to carry the flavors. 

This dish is very easy to make and serves as a very filling breakfast. 

This dish has a little bit of the all the flavors in it. It has the sweetness, sourness, spiciness and crunch from the onions. Give this recipe a try and enjoy :)
Ingredients
Chopped Onions – 3 (big)
Poha (Flattened Rice/Aval) – 2 cups
Chopped Green Chilli - 6
Turmeric Powder – ½ tsp
Boiled Potatoes – 1 cup
Lemon Juice - 2 tsp
Oil – 1 tsp
Sugar to taste
Salt to taste
(To Temper)
Asafoetida – a pinch
Mustard Seeds – 1 tsp
Chopped Curry Leaves – few
Chopped Coriander Leaves - few
Ghee – 2 tsp
Method
Wash the poha in a colander. It should be moist but not mashed.
Add salt and sugar and mix lightly. Then keep it aside.
In a pan, heat oil.  Add mustard seeds and when they splutter add asafoetida and curry leaves.
Saute for half a minute and add onions and continue to saute.
Add green chillies and mix. Add turmeric powder and mix.
Saute for two minutes and add potato and poha. Mix and cook till poha is heated through. Add lemon juice and mix lightly.
Garnish with coriander leaves and serve hot.
