Beetroot Thoran
This is a simple and easy beetroot thoran which goes well with hot steamed rice. You can use this thoran for making bread sandwich. Kids love this dish.
Ingredients
Finely Chopped Beetroots – 2 cups
Soaked Channa Dal – 5 tsp
Sliced Green Chilli - 2
Grated Coconut – ½ cup
Finely Chopped Onions – 5 tsp
Chilli Powder – 1 tsp
Salt to taste
(To Temper)
Mustard Seeds – 1 tsp
Cumin Seeds – ½ tsp
Urad Dal – 1 tsp
Chopped Garlic – 1 tsp
Chopped Ginger – 1 tsp
Chopped Curry Leaves – few
Chopped Coriander Leaves - few
Coconut Oil – 2 tsp
Method
In a kadai, add soaked channa dal, salt, chilli powder, and chopped beetroot with little water and cook till it becomes soft and cooked well. Switch off the flame. Keep it aside.
In a pan, heat oil. Add all the ingredients which are under “to temper” one by one and fry for a min.
Then add chopped onions and fry well. Now add grated coconut and fry then mix it well.
Add the cooked beetroot and mix well. Then serve with hot steamed rice.

Chickpea Cutlets
Chickpea cutlet
is a healthy and tasty snack. Chickpea has protein. It’s good for health. Kids
love this snacks. Usually we prepare chickpea to make sundal or channa masala.
Cutlet is the most
delicious Indian appetizer. If you are on a diet you can microwave it and serve
it with tomato ketchup or chutney.
It’s a unique and the taste is tremendous. I have
prepared channa side dish with this cutlet. You can make any chutney or sambar
with this snack.
Chickpea (soaked) – 2 cups
Chopped Coriander Leaves – 2 tsp
Chopped Mint Leaves - 2 tsp
Chopped Onions – 1 cup
Chopped Garlic – 5 tsp
Chopped Ginger – 3 tsp
Chilli Powder – 2 tsp
Coriander Powder – 1 tsp
Cumin Seeds – 1 tsp
Baking Soda – a pinch
Lemon Juice – 2 tsp
Salt to taste
Oil for deep fry
Method
Wash and soak chickpea through overnight. Then add this in a blender and grind it as a paste with adding little water.
Heat oil in a pan, add cumin seeds and fry for seconds.
In a big bowl, add chickpea ground paste, chopped onions, ginger and garlic, fried cumins, coriander leaves, mint leaves, chilli powder, coriander powder, baking soda, lemon juice, salt and mix well.
Then make it as any shape of cutlets and keep it in a plate.
Heat oil in a kadai, then deep fry cutlets in oil and use paper towel to remove excess oil.
Then serve with sauce or any chutney.

Veggie Omelete Bread Sandwich
This is an easy and healthy veggie omelete. It’s a nice and
flavorful dish suitable at evening time with hot milk or tea or coffee.
Ingredients
Eggs – 2
Finely Chopped Onions – ¼ cup
Finely Chopped Tomatoes – ¼ cup
Chopped cilantro – 3 tsp
Chopped Garlic & Ginger – 1 tsp
Chopped Grapes (to garnish)
Pepper Powder – ½ tsp
Crushed Pepper – 1/4tsp
Cumin Powder – ½ tsp
Chilli Powder – a pinch
Grated Cheese - 1/4 cup
Bread slices - 4
Oregano – a pinch
Oil – 1 tsp
Method
In a pan, heat oil. Break the eggs and pour it. Add Salt,
pepper powder, cumin powder, chilli powder and spread on the top of the eggs.
Now add chopped onions, ginger and garlic, chopped tomatoes
and cilantro and close the lid. Sprinkle some oil if it’s really needed.
Then switch of the flame and garnish with chopped grapes.
Once it done, take bread slices and keep this omelette and add grated cheese then put it in a sandwich maker or dosa dawa.
Serve hot with tea, milk with hot chips.

Spanish Chicken Rice
This is a simple, delicious and great dish which goes well with any fry/ raita/chips... It is a method of spanish chicken rice and popular in Mexican cuisine.
Ingredients
Basmati Rice – 2 cups
Chicken Pieces - 1/2 kg
Chopped Onions – 1 cup
Chopped Tomatoes – 2 (big)
Butter – ½ cup
Crushed Garlic – 1 cup
Cloves – 4
Sliced Red Chilli – 2
Sliced Green Chilli – 6
Peppercorn – 1/ 4 tsp
Pepper Powder - 2 tsp
Chilli Powder - 1 tsp
Grated Cheese – ½ cup
Cinnamon sticks – 2
Bay Leaf – 2
Anise – 2
Oil – 2 tsp
Cherries – 4
Method
Heat oil in a pressure cooker, when it’s hot add chopped onions, salt and fry till it turns a golden brown color.
Then add the butter and mix it continuously till it melts completely with the onions.
Add crushed garlic and fry well. Then add small pieces of chicken with pepper and salt and chilli powder then fry well.
Once it has done well, then add rice and fry this for five minutes. Toast the rice in the mixture.
Now add the tomatoes, pepper, cloves and red chillies. Fry them well with the rice.
Then add sliced green chilli, dry red chilli, cloves, cinnamon sticks, anise, peppercorn, bay leaf and mix well.
Pour water (3 cups) and close the lid and keep cook until 3 whistles come out. Once it done, let it be for 10 min.
Add chopped Cherries and mix well with rice. Then open it and add grated cheese over the hot and garnish with coriander leaves.
