Coconut Rice

It is a very simple recipe and can be prepared in short time. In this dish, I have added finely chopped ginger to give a special taste. 

 If you want your coconut rice to taste yummy, use coconut oil for seasoning. 




 This goes well with any fry or varuval. Here is the recipe...



 Ingredients

Boiled Rice – 2 cups
Grated Coconut – 2 cups
Channa Dal – 2 tsp
Urad dal – 1 tsp
Chopped Ginger – 1 inch
Mustard Seeds -1 tsp
Cumin Seeds – 1 tsp
Sliced Green Chilli – 3
Fried Nuts – 5 tsp
Dry Red Chilli – 3
Hing – a pinch
Ghee – 1 tsp
Coconut Oil – 2 tsp
Chopped Coriander Leaves – few
Chopped Mint Leaves – few
Curry Leaves – few
Salt to taste

Method

Cook rice separately and spread the cooked rice on wide plate and allow cooling.

Heat coconut oil in a pan, add mustard seeds, cumin seeds, red chilli and sauté it for a min till the aroma is released.

Now add the urad dal, channa dal, green chilli, chopped ginger, cashew nuts and sauté it till it turns slight in brown color.

Then add the grated coconut and salt fry well. Now add ghee on top of this mix. 

Finally add the rice and fry for about 5 minutes on low flame.


Mix well and add chopped coriander, mint leaves then switch off the flame.
