Soya Chunks Tomato Rice


Soya Chunk Tomato Rice is a tastiest rice recipe. It has high protein. It helps to prevent heart diseases. This is a perfect lunch box recipe. Kids love and enjoy to have this.


This goes very well with egg fry and onion raita.

Ingredients
Basmati Rice – 2 cups
Soaked Soya Chunks/ Meal maker – 2 cup
Sliced Onions – 3 (big)
Chopped Tomatoes – 5 (big)
Sliced Green Chilli –
Salt to taste
Chilli Powder – 1 ½ tsp
Turmeric Powder – ½ tsp
Ghee – 3 tsp
Finely Chopped Mint Leaves - few
Oil – 2 tsp
Water – 3 cups (1 : 1 ½)
(To Saute)
Bay Leaf – 1
Cinnamon Sticks – 2
Clove – 2
Cardamom – 3
Finely Chopped coriander Leaves – few
Method
In a pressure cooker, heat ghee. Add the ingredients one by one which are under to sauté and fry this for few seconds.
In that, heat oil. Then add green chilli, onion slices and sauté it well. Add soaked meal maker into it with little salt and fry this for few min.
Add chopped tomatoes and cook it well. Add chilli powder, turmeric powder with required salt and mix well.
In a kadai, heat remaining ghee with cardamom, mint leaves and takes the rice and sauté it for few min. This help to avoid without breaking the rice.
Then add the sautéed rice with required water. Then close the lid and keep cook till 3 whistles comes out.
Once it done, serve it with egg fry and onion raita.
