It is
very easy and quick to make. I make this poriyal / Stir fry often. It is also
perfect healthy snacks box for the kids.
This is
easiest and quickly digestible dishes. This goes very well with rice/
roti/chapatti/ any bread…
Ingredients
Chopped
Beans – 1 cup
Chopped
Carrots – 1 cup
Yellow
moong dal / Paasi paruppu – 1/4 cup
Chopped
Onion – 1 (big)
Mustard
seeds – 1 tsp
Whole
dry red chilli – 3
Urad dal
– 2 tsp
Fresh
Grated coconut – 4 tbsp
Curry
leaf – 1 sprig
Salt –
to taste
Oil – 1
tbsp
Method
Soak the
moong dal for ½ hour and pressure cook for just 1 whistle.
Steam
the carrots and bans for 3-4 min.
Heat a
pan with oil. Temper with mustard seeds. Once they splutter add the urad dal
and whole red chillies. Roast till the urad dal turns golden brown.
Add the
chopped onion and curry leaf and sauté till the onions turns pink.
Now add
the cooked yellow moong dal, cooked veggies, grated coconut, and salt and mix
well. Close the pan with a lid and cook for 2 min or till dry.
Serve
hot with rice/roti/bread…
