Mango Chicken Curry

This tasty mango chicken curry is prepared with mango paste which is combined with other exotic spices to give this dish a delectable taste which is simply hard to resist. 
 This goes well with steamed rice/ chapatti/roti/dosa/idli…

Ingredients
Chicken – ½ kg
Chopped Onions – 2 cup
Cumin Powder – 1 tsp
Fennel Powder – 1 tsp
Chilli Powder – 1 tsp
Corander Powder – 2 tsp
Garam Masala – ½ tsp
Salt to taste
Oil – 3 tsp
(For Ground Paste)
Chopped Mangoes – 1cup
Garlic – 5 pods
Ginger – 1 piece
Chopped Coriander Leaves – ½ cup
Curd – 2 tsp
Green Chillies – 5
To Temper
Bay Leaf – 2
Cinnamon Sticks – 2
Cardamom – 2
Cloves – 2
Curry Leaves – few
Chopped Coriander Leaves – few
Method
In a blender add all the ingredients which are under “for ground paste” with little salt and grind it as a fine paste. Then keep it aside.

In a kadai, heat oil. Add all the ingredients which are under “to temper” and fry for a min.

Then add the chopped onions and fry till it becomes mushy. Now add chopped chicken pieces (small sized) and fry for another 5 min on low flame.

Add the ground paste and sauté it for another 3 to 5 minutes.

Now add chilli powder, coriander powder, cumin powder, fennel powder, garam masala and mix well.

Add 2 to 3 cups of water and close the lid and keep cook for another 10 to 15 min. The chicken should be cooked well and 
absorbed well with all spices in this curry.

Then switch off the flame and garnish with chopped coriander leaves.
