Okra Yogurt Curry | Dahi Bhindhi | வெண்டைக்காய் தயிர் கறி


 This is simple and tasty Okra Yogurt curry. In this dish, okra pieces are sautéed well in Oakland then tossed with spiced yogurt sauce. It’s also called Dahi bhindhi or வெண்டைக்காய் தயிர் கறி . This goes very well with chapatti or Parotta. Enjoy well 😊

Ingredients 

For Okra Curry 

Chopped Okra - 20

Chopped Onion - 1

Yogurt - 1 Cup (beaten)

Ginger Garlic Paste - 1 tsp

Turmeric Powder - 1/4 tsp 

Chilli Powder - 1 tsp 

Coriander Powder - 1 tsp

Cumin Powder - 1 tsp 

Salt to taste 

To Temper

Oil - 4 tbsp 

Bay Leaf - 2

Cardamom - 2

Cumin Seeds - 1 tsp 

For Yogurt Dip

Yogurt - 1/ 2 cup

Salt - little 

Garam Masala - 1 tsp 

Chopped Coriander Leaves - few

Method 

Heat 2 tsp oil in a pan. Add chopped okra pieces and fry until it turns color changes for about 10 minutes on low flame. Once it done, then keep it aside. 

Heat oil in a pan. Add bay leaf, cardamom cumin seeds, dry methi leaves and fry for 30 seconds.

Add chopped onion along with required salt and ginger garlic paste then fry until it changes color.              

Then add all spices cumin powder, coriander powder, chilli powder  and mix well . Then add turmeric powder and then sauté well.

                                                                                   

                                             

Add the beaten yogurt and keep stirring it until oil separates. Once it done, add the fried okra pieces and mix well.


Close the lid and simmer it for about 5 minutes.



In another pan, add half cup beaten yogurt, garam masala and chopped coriander leaves.    






Stir it for about 1 minutes and add this into okra curry. 

Combine well and close and cook for about 2 minutes.                      

Add chopped coriander leaves and turn off the heat.                              


                 



Serve this yummy and tasty okra yogurt curry with Parotta or chapatti.
