Roasted Bitter Gourd Fry

 I'm always looking for innovative ways to serve bitter gourd. I was just experimenting with my Indian spices one day and made this yummy dish. It is a great side for a number of South Indian rice dishes like rasam or sambar rice. In this dish, sliced bitter gourd pieces marinated with Indian spices and sautéed with tempering ingredients. Enjoy cooking!



Ingredients 

Sliced Bitter Gourd - 2 Cups 

Rice Flour - 2 tsp 

Chilli Powder - 1 tsp 

Coriander Powder - 1 tsp 

Turmeric Powder - 1/2 tsp 

Lemon Juice - 2 tbsp 

Salt to taste 

Oil - little 

Chopped Onion - 1/4 Cup 

Curry Leaves - few 

Chopped Coriander Leaves - few

Chopped Mint Leaves - few

To Temper 

Oil - 1 tsp 

Mustard Seeds - 1/2 tsp 

Fennel Seeds - 1/2 tsp 

Urad Dhal - 1 tsp 

Dry Red Chilli / 2

Curry Leaves - few 

Chopped Coriander Leaves - few

Chopped Mint Leaves - few 

Method 

Take a bowl, add rice flour, chilli powder, coriander powder, salt, turmeric powder, curry leaves, chopped onions, mint leaves, chopped coriander leaves, lemon juice and mix well.

Add little water to make right consistency batter. Then add sliced bottle gourd pieces and mix it very well.

Let it marinate for 20 to 30 minutes.

Heat oil in a pan, add tempering ingredients one by one and fry for few seconds.

Then add marinated bitter gourd pieces, and mix well. Then close the lid.

Let it cook completely on low flame for about 5 minutes.

Then flip it and roast both sides. If required add little water and fry until gets right consistency.

Once it done, switch off the flame and serve with hot steamed rice/chapatti.
