Spicy Cashew Chicken Stir Fry



It’s a simple, yummy Chinese-American dish. In this dish, chicken is deep fried and sauteed with cashew and some other sauces.

I have added fried cashew, it gives crunchier to this dish. If you have chicken with fried cashews and marinated sauces, you may feel the extra ordinary taste.

For few days I didn’t prepare anything differently in chicken. Yesterday I did it. We loved this dish… If you want spicier increase the quantity of chilli sauce.

This goes well with steamed rice and roti. Try this new recipe and enjoy with your meal.

Ingredients

Chilli Sauce – 2 tsp
Soya Sauce – 2 tsp
Tomato Sauce – 2 tsp
Red Chilli Paste – 2 tsp
Chopped Onion – 1 (big)
Sliced Green Chilli – 7
Chopped Capsicum – 2 (small)
Ginger garlic paste – 1 tsp
Cashew Nuts – ½ cup
Chopped Ginger Garlic – 1 tsp
Mint Leaves – few
Spring Onions - few
Chopped Coriander Leaves – ½ cup

(For Chicken Fry)
Chicken – ½ kg (small pieces)
Egg – 2
Corn Flour – 4 tsp
Pepper Powder – 1 tsp
Salt – to taste

Method

Clean and wash the chicken pieces properly and cut into small pieces.

In a small bowl adds green chilli paste, tomato paste, soya sauce and red chilli paste and mix it well.

In a medium bowl add beaten eggs, corn flour, salt and pepper powder. Mix well and then add the chicken pieces into it.

Heat oil in a pan, and then fry the chicken pieces till it turns light brown in color.
Once it done, transfer the chicken pieces into paper towel. It helps to remove the excess oil.

Heat oil in a kadai, then fry cashew nuts and add onions and fry till it becomes mushy. Now add the chopped ginger garlic, mint and coriander leaves.

Then add sliced green chilli, capsicum and fry for 3 min on a low flame. Now add the sauces which are in small bowl. Then add little bit salt and mix it well.

Then add the fried chicken pieces and saute well on a low flame. Now add mint leaves, spring onions and chopped coriander leaves.

Switch off the flame and serve hot!!!
